Sometimes you just need a good old fashioned chocolate chip cookie. In fact, sometimes=yesterday for me. Feeling like I needed to indulge, I followed my roommate on a trip to Trader Joe’s with the sole mission of getting ingredients to make them. But who am I kidding, once I got to the bakery aisle and saw them already made, all intentions of baking them myself went right out the window. What can I say, I like instant gratification. So anyway, I trekked back to my apartment (only two blocks) with a bag of chocolate chip peanut butter cookies, walked in the door, opened those babies up, and took an enormous bite of what I thought would be a life-altering (or at least craving-satisfying) cookie. And as I chewed that first bite I realized that while they did taste good, they kind of fell flat. Like borderline-stale flat.
Guys, I wish I could say that this stopped me from eating any more of them…but…it didn’t and I woke up this morning thinking ‘Why did I do that???’. My first response to that question in my head was ‘You are NEVER doing that again!!!!!’. But then a moment later I realized that would 1) be unreasonable and 2) be no fun. So I resolved to the fact that I could have a night of cookie indulgence as long as I took the effort to make something that was truly delicious. Aka I have to stop being so darn lazy. So in preparation for my next give-me-a-milano-or-kill-me-now day, I’ve prepared a round up of some of the best sounding recipes that I’ve come across and can’t wait to try.
